We have carefully chosen specialty and heirloom varieties of
vegetables that add a unique flare and flavor to our meals. Providing
fresh, raw foods also provides a missing link that may have a
great impact on our physical well-being and spiritual connection.
For example, there are many vital nutrients that are only naturally
found in fresh garden produce, which disappear shortly after
harvest. One of these nutrients is homeostatic soil organisms
which play a crucial role in digestion and assimilation of nutrients.
Raw living
foods are foods from the earth, organic and are naturally high
in vibration because they have not been cooked. These foods
include, fruits, vegetables, nuts, seeds and sprouted grains
with special preparations through blending, chopping, juicing,
dehydrating and combining into infinite flavorful combinations.
Living foods are high in enzymes, nutrients, and essential
fatty acids. Preferably, raw/live food is made from organic
ingredients which have been grown in soil that is enhanced
with such organic aids as compost, natural rock products, etc…
Organic farming produces the purest, most nutritious and natural
food because pesticides or other forms of unnatural fertilization
are not used. This
is a very natural and delicious way of eating that dates back
to the times of the Essenes. This healing diet cleanses the
body, mind and spirit. Many people experience an increase in

Valley offers strictly vegetarian with the option of delicious
wholesome vegan or revitalizing raw living foods. Vegetarian
is meatless (no beef, chicken, pork, and fish) but does include
dairy products and eggs. Vegan means no meat, dairy, or eggs.
Raw living food is no meat, dairy, or eggs and the food is
uncooked to keep it in its natural raw state. We take pleasure in presenting meals that excite the senses and please the palette. Experiencing living foods is an opportunity to give our digestion a break and actually increase our enzyme reserve rather than deplete it. At the cellular level, this creates more room for healing and observing the body’s true needs. Most people may think of raw living foods as an apple or a carrot, naturally delicious but plain and maybe even boring. Not so. There is a tantalizing array of preparations that may be created from the simplest ingredients.
